Roasted Chicken Leg Quarter with Vegetables

INGREDIENTS:

  • 1.1kg of Urban Meat’s Chicken Leg Quarter
  • 1 tbsp butter
  • 1 tbsp oil
  • 1 tsp red chilli powder
  • 1 tsp peri peri spice
  • ½ tsp black pepper
  • 1 tsp ginger garlic paste
  • 1 tsp salt
  • ½ lemon
  • 1 large onion cubed
  • 1 large tomato
  • 1 large potato cubed
  • 34 chillies
  • 5 french beans (cut into two)
  • 6-7 broccoli florets

PROCEDURES:

1. Preheat oven 400°F (205°C). Line baking sheet with foil or grease lightly.

2. Mix butter, oil, spices, salt, and garlic. Pat dry 4 chicken leg quarters and prick skin all over.

3. Rub spice mixture on chicken. Place chicken and veggies on baking sheet.

4. Roast 35-40 minutes, flipping halfway if desired. Serve and enjoy!
